Tuesday: What’s for Dinner?

Sometimes you may need a simple meal that you can whip up in the evening after a hectic day. You may have hungry kids around the table with forks and knives in hand, demanding food, or maybe it’s just a fast meal for you after work before you curl up to watch your favourite show.

Whatever the need may be, why not try this “classic quiche” recipe that is guaranteed to save you from the uncertainty of dinner?  Make sure you toss your preferred salad, or prepare a nice bowl of soup to compliment this tasty dish. This one is an oldie, but a goody:

Spinach and Cheddar Quiche

Ingredients:

8-9 large eggs

1 cup of heavy cream

1 teaspoon of salt

dash of black pepper

1 cup chopped spinach

1 cup of grated cheddar cheese

sprinkle of nutmeg

1 box frozen puff pastry

 

Directions:

Set oven on 375 degrees. Let puff pastry defrost before rolling two  pieces out to set into the greased pie pan. Be sure to pinch the corners and overlap two pieces to make a whole piece (depending on how big your pan is). In a bowl, beat eggs, salt, black pepper, nutmeg, cream together. Add in 3/4 cup of the cheese and spinach. Pour into the pan and sprinkle the remainder of cheese on top. Bake for 35-40 mins, or until golden brown. Feeds a family of five, or makes leftovers for a single person. Easy peasy. Enjoy!
